NOW. It's canning season right now. You. Can. DO THIS.

Never fails, when the cold weather returns I start craving jam.  Jam on bread, on toast, by the spoonfuls - its a desperation and longing for the warm summer months.

So last year I bought a flat of berries with the intent to can them.  But first I had to eat a few.  Then sprinkled a few on ice cream and cake and of course on my breakfast granola.  By the end of the week, I had a handfuls of berries left, not enough to can.  So I cheated and put them in the freezer and forgot about them.

Can I tell you the pure bliss of one cold January morning when I was sure we'd never see the sun again.  And I saw the bag of berries nestled deep in the freezer.  Gingerly I lifted the sweet morsels of sunshine out and put them in a pot to make a sauce for my dismally naked waffles.  Spooned the berries onto my plate and actually started purring like a cat.  There was hope.  A few berries transformed the dismal, grey rainy day into dreaming of summer and flip flops and long tea breaks on the lanai.

So now its your turn.  I found this article that has me planning my shopping list for this Wednesday's visit to the Victoria Public Market at the Hudson.  Together, we can do this.  We can get our island fresh berries and fruit and can up some summer dreaming that will be ready for us when old man winter makes his return.

Funny thing...I just made a bunch of strawberry jam and it came out perfect. I was always afraid to can and then I said to myself "Self...if you can work with LYE, you can use a canner" So I did. It's always about the soap isn't it?

Yes it is about soap. Glad your jam worked out. My sister does a blog for a venue in our city and she accidently posted that blog into our blog but it works for this time of year.
